2 cups oatmeal (blended up to make flour)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon rock salt
3 over ripe bananas, mashed
1 tablespoon coconut oil
1/4 cup stevia
1 teaspoon pure vanilla extract
2/3 cup organic dark chocolate chips
1 tablespoons oatmeal
Preheat oven to180 degrees. Spray 9×5 inch loaf pan with spray oil.
Combine in a medium bowl the 2 cups oat flour (make sure there is still 2 cups of oats once they are blended), baking powder, baking soda, and salt.
In a separate large bowl, beat mashed bananas, 1/4 cup stevia, vanilla extract, and oil for 1-2 minutes until the consistency is smooth and creamy.
Slowly add in oat flour mixture and mix until just combined.
Gently fold in chocolate chips.
Pour batter into the loaf pan and sprinkle 1 tablespoons oatmeal over the top. Bake for 35-45 minutes or until knife inserted into center comes out clean.
Cool 10-15 minutes, then remove from pan and place on wire rack to finish cooling.
Cut into thick slices.
Bread will stay good for up to 3 days if wrapped well. Feel free to use less chocolate chips. Adding chopped walnuts or coconut flakes to the batter would provide additional delicious healthy fats.[br][br]Remember this is a special treat, not for every day! =)
