INGREDIENTS:
1 whole free range egg
2 egg whites
30g chopped chicken (if not already cooked, cook first)
1/4 Capsicum diced
6 baby spinach leaves
Onion (optional)
1 Mushroom
1/2 tomato diced
pepper and mixed herbs to taste
PREPARATION:
Toss veggies in moderate pan for about 1 minute or until onion transparent.
Remove from pan
Beat egg and egg whites together
Add egg to pan
Add veggies and chicken on top of the egg
Cook to preference
Season with pepper and mixed herbs
NOTE:
This may serve 2 depending on how hungry you are!
